10 Ways to Jazz Up Simply Cooked Vegetables

When gratin is not the answer

Now that the holidays are behind us, you may be craving fewer indulgent dishes, which is where vegetables can come in. Consider these quick additions that add punch to any kind of simply cooked vegetable. Sprinkle or drizzle, then toss — or not.

Here’s an easy-lift example: Shred Brussels sprouts like a slaw, then salt, pepper, and dress with olive oil. Toss and let sit for at least 10 minutes at room temperature. Meanwhile, toast and crush walnuts. Finish Brussels sprouts with fresh lemon juice, add walnuts, toss, and adjust seasonings to taste.

Here are more additions to mix and match:

Fresh lemon or lime juice

Chopped fresh herbs

Grated citrus zest

Toasted bread crumbs

Chopped nuts

Sesame, walnut, hazelnut, or pumpkin seed oil

Compound butter

Spice mixtures, especially chili powder or garam masala

Vinaigrette

Croutons
