Thanksgiving Desserts for Everyone
For traditionalists, vegans, and even guests who aren’t super into sweets
You can’t please everyone. But when it comes to Thanksgiving dessert, we’re going to try.
For traditionalists: Pumpkin Pie
I’ll never understand why most people only eat this pie once a year, especially since there are so many ways to vary it. Substitute cooked, pureed, and strained winter squash, sweet potatoes, or white beans (yes) for the pumpkin if you like, topped with whipped cream, naturally.
Time: 1 ½ hours
Makes: One 9-inch pie (about 8 servings)
Essentially a custard pie with lots of added spice and, of course, pumpkin. Pre-cooking the crust and filling makes the bottom of the pie nice and crisp. Substitute cooked, puréed, and strained winter squash, sweet potatoes, or white beans for the pumpkin if you like. The best ways to finish this pie: Top with whipped cream flavored with cinnamon, nutmeg, or ginger if you like.

1 flaky pie crust (see below) fitted into a 9-inch pie pan and chilled
3 eggs
¾ cup sugar
